In my opinion, grilled corn never gets old– a charred exterior bursting with fresh, sweet, and juicy corn… it doesn’t need much (or anything) to taste amazing! BUT, anything can taste better with my favorite food, butter.
These compound butters contain some of my favorite corn-complimentary flavors like complex miso, salty cotija cheese, tangy buffalo sauce, parmesan, and chipotle. All 5 of these butters are winners, and I think you (and your corn) will like all your new corn outfits! To grill delicious charred corn on the cob, peel back the husk and leave it on the end of the corn to use as a handle. Rub the corn down all over with a light layer of high smoke point oil (such as canola or vegetable) and a sprinkle of salt. Heat a grill or grill pan to high heat, and grill the corn, leaving the husk hanging off the grill, and rotate every 5-8 minutes or so. Corn does take a while to get a nice char all over, so try to be patient and know that it’s worth it!
5 Compound Butter Recipes for Topping Grilled Corn
To make these tasty butters, simply stir together the ingredients until well combined. There is a bit of stirring required, but you will get there!
1.Buffalo Hot Sauce Butter
4 tbsp softened butter
6 tsp buffalo wing sauce (such as Frank’s)
2. Parmesan + Hot Honey Butter
4 tbsp softened butter
4 packed tbsp finely grated parmesan cheese
2 tsp hot honey
Pinch salt
3. Tomato, Chipotle, + Garlic Butter
4 tbsp softened butter
1/2 cup diced fresh tomato
4 minced garlic cloves
1/4 tsp chipotle chili powder
Pinch salt
Sauté the tomato and garlic in 1 tbsp of the butter over medium-low heat. Cook until tomato breaks down a bit and the garlic is cooked, about 8 minutes. Allow to cool to room temperature, then stir together with the remaining butter and chipotle.

4 tbsp softened butter
4 tsp fresh minced jalapeno
1/2 tsp packed lime zest
6 tsp finely crumbled cotija or feta cheese

2 tsp white miso paste
2 tsp honey
1/2 tsp packed lemon zest
