Grill outdoors or on a grill pan, and be sure to have patience with your kebabs– let them grill undisturbed without fiddling. When the pork and yogurt coating are well seared, a crust will form, and release from the grates.
Curried Pork Kebabs Recipe
Grilled Curried Pork Kebabs
Servings: 2 Servings
Ingredients
- 2 tsp curry powder
- 1/2 tsp turmeric
- 1/4 tsp coriander
- 1/4 tsp cumin
- 1 tsp sugar
- 1/2 tsp salt, plus more
- 1 tbsp canola oil
- 1/4 cup plain 2% greek yogurt
- 2 garlic cloves, pressed or grated on a microplane
- 1 lb pork tenderloin, cut into 1 inch pieces
- 1 lime, cut into 4 wedges
- 1 red onion, cut into 8-10 wedges
- 1/2 cup chopped cilantro
Instructions
- In a small bowl, stir together the curry powder, turmeric, coriander, cumin, sugar, salt, yogurt, and garlic. Add the pork and toss to coat. Then, in a separate bowl, toss the red onion wedges with the canola oil and 1/8 tsp salt.
- Skewer the pork and onions to form kebabs, and heat a grilll or grill pan over medium high heat. Oil the grates well. Add the kebabs and reduce heat to medium. Cook for 15-20 minutes, or until the pork is no longer sticking (be patient, and don’t panic if there is sticking, it’s normal! When the pork is cooked enough it will unstick itself. If you do encounter a bit of sticking after 20 minutes, use a pair of tongs to gently slide between the pork and the grates.)Then flip, and reduce heat to medium low. Cook 8-10 minutes, or until pork is cooked through.
- Garnish with cilantro and serve with lime wedges and coconut rice!
