This poptail recipe features delicate flavors of sweet lychee, tangy raspberry, floral rose, and sophisticated champagne. Pink and perky, they’re a frozen treat that can be enjoyed in a glass of bubbly or all on their own!
Though rose can sometimes be overwhelming, I feel that the right balance has been struck in this popsicle recipe, and rose truly compliments lychee and raspberries in a very pleasing way. It gives these pops a really exotic and beautiful flavor! The addition of whole raspberries frozen in the molds gives a bit more texture variation and full raspberry flavor.
Remember, alcohol doesn’t really freeze, so alcoholic popsicle recipes won’t freeze as solidly as regular popsicles. Allow to freeze for a full 8 hours before enjoying. Boozy popsicles must have no more than a 1:4 ratio of alcohol to other liquid ingredients or they won’t freeze successfully, so don’t get too excited pouring in that bubbly!
Lychee, Raspberry, Rose, + Champagne Popsicles Recipe
Raspberry, Lychee, + Champagne Popsicles
Ingredients
- 1/2 cup sugar
- 5 tbsp water
- 3 tbsp rosewater
- 12 fresh lychees shelled and pitted
- 2 cups raspberries divided
- pinch salt
- 1/2 cup prosecco or champagne
Instructions
- In a small saucepan over medium heat, combine the sugar, water, and rosewater and stir until the sugar has completely dissolved. Remove from heat and let cool.
- When the syrup has cooled, transfer to a food processor along with the lychees, 1.5 cups of the raspberries, and the salt. Puree until smooth, then work the mixture through a fine mesh sieve into a clean bowl. Stir in the prosecco or champagne and ¾ cup water.
- Place 3 whole raspberries into each popsicle mold, then fill the molds with the puree. Freeze until completely solid, about 8 hours, then enjoy in a glass of bubbly or on their own! (Popsicles will be a little softer than traditional popsicles, due to the alcohol content!)
