Pomodoro sure is a fancy name for something so simple!
I’m a big fan of keeping homemade sauces and stocks in the freezer for back up, and this one can be such a lifesaver for weeknight dinners and late night pasta cravings (that’s a thing, right?) Anyway, here’s how you make it!
No-Fail Pomodoro Sauce Recipe
No-Fail Pomodoro Sauce
Servings: 30 oz
Ingredients
- 1/4 cup olive oil
- 1 small yellow onion finely diced
- 2 garlic cloves minced
- 1/8 tsp red pepper flakes
- salt to taste
- 28 oz can whole peeled plum tomatoes
- 1/2 tsp dried oregano
- 1/2 tsp sugar optional
- a few torn basil leaves
Instructions
- In a medium pot over medium, add the olive oil, onion, garlic, and red pepper flakes. Season with salt, and cook, stirring occasionally, until onions are translucent and softened.
- Add the can of whole peeled plum tomatoes with its juices, crushing the tomatoes with your hands. Season with salt, dried oregano, and sugar if using.
- Bring the sauce to a simmer, reduce heat to medium low, and cook 30 minutes uncovered.
- Remove from heat and use an immersion blender to puree on low (or cool to room temperature and puree in a blender or food processor). Stir in the basil leaves and serve!
