Simple Tarragon Vinaigrette Dressing Recipe
In my hometown, there is a French cafe with the most delicious tarragon vinaigrette dressing. An elegant glass bottle sits atop each table, waiting to drizzle the fresh salad greens that are served alongside their quiche Lorraine and savory crepes. It. Is. AWESOME. So, being on the literal opposite-most side of the country from this cafe, I had to try to make my own! I was not disappointed. Fresh tarragon is balanced by a bit of parsley, a little kick of dijon, and bright, sunny lemon. Put it on everything!!
Tarragon Dressing
Servings: 6 Servings
Ingredients
- 1/2 cup lightly packed tarragon leaves
- 1/2 cup unpacked parsley leaves
- 1/2 tsp salt
- black pepper to taste
- 6 tbsp white wine vinegar
- 2 tbsp lemon juice
- 2 tbsp honey
- 1/2 cup + 2 tbsp olive oil
- 2 tsp dijon mustard
Instructions
- Combine all ingredients in a food processor and process until the tarragon and parsley leaves are well blended and the dressing is emulsified. Serve right away, or store in the refrigerator up to 3 days.
I have had tarragon dressing similar to this at a local French bistro. With its licorice undertones, tarragon is a tricky herb as it’s so powerful. So glad to have this so I can enjoy a green salad at home and skip the bistro💕
