Halloween Candy + Cereal Treat Sushi

Servings: 18 -ish Sushi Pieces

Ingredients

  • 1 stick unsalted butter, plus 1 tbsp more for coating your hands
  • 1/8 tsp salt
  • 1/4 tsp vanilla
  • 12 oz marshmallows
  • 7 cups crispy rice cereal
  • Assorted creepy gummy candies such as eyes, brains, fingers, snakes, and worms
  • Sour candy belts
  • Fruit leather (I used assorted Fruit Roll-Ups)

Instructions

  • Make the cereal treats: In an 8 quart pot, melt the butter over low heat until lightly browned and nutty. Add the salt, vanilla, and marshmallows, and stir occasionally until melted. Turn off the heat, pour in the cereal and stir until combined. Let cool slightly before handling.
  • Coat your fingers and palms with butter, and use your hands to scoop out a little bit of the cereal treat mixture at a time. Mold into the shapes of nigiri (ovals that are flat on the bottom), and onigiri (triangles with rounded corners). To make uramaki, (round, sliced, filled rolls), form a wide, flat rectangle on a cutting board. Slice off the edges for a sliced look, and slice into 1 inch strips. Fill the strips with candy and roll, trimming the ends and pressing together to seal. Work with the cereal treats while they are warm, and apply pressure to ensure they keep their shape. If the mixture cools too rapidly, turn on the heat again to low for a minute or two.
  • Once the shapes are molded, decorate with candies and wrap in fruit leather or sour belts!
