Tarragon Dressing

Ingredients

  • 1/2 cup lightly packed tarragon leaves
  • 1/2 cup unpacked parsley leaves
  • 1/2 tsp salt
  • black pepper to taste
  • 6 tbsp white wine vinegar
  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 1/2 cup + 2 tbsp olive oil
  • 2 tsp dijon mustard

Instructions

  • Combine all ingredients in a food processor and process until the tarragon and parsley leaves are well blended and the dressing is emulsified. Serve right away, or store in the refrigerator up to 3 days.
