🍋 In a small saucepan, combine 1 cup sugar and 1 cup water. Bring to a boil and stir until sugar is dissolved. Cool to room temperature, and refrigerate syrup until chilled.
🍋 Meanwhile, peel 2 large english cucumbers and slice lengthwise. Use a spoon to remove the seeds and pulp. Cut into pieces, transfer to a food processor, and puree. Pour over a fine mesh strainer into a bowl, using a spoon to press out all of the liquid possible. Discard pulp, and refrigerate cucumber juice.
🍋 Combine the syrup, cucumber juice, 6 cups of water, and 1 + 1/2 cups fresh squeezed lemon juice in a pitcher, and serve over ice.
